How to Season and Care for Your Cast Iron Skillet
Cast iron has a reputation for being difficult.
It’s not. It’s just different from everything else in the kitchen, and different gets misread as difficult. The rules for cast iron are not complicated — they’re just specific. Learn them once and the pan takes care of itself for the rest of your life.
That part is true. A cast iron skillet maintained correctly doesn’t need to be replaced. It doesn’t wear out. It doesn’t chip, warp, or develop scratches that make you nervous about what’s leaching into your food. It gets better with use, not worse. That’s the deal, and it’s a good one.

What Seasoning Actually Is
Before the how, the what. Because half the confusion around cast iron starts with a misunderstanding of what seasoning means.
Seasoning is not a coating applied to the pan. It’s not a layer of oil sitting on the surface. It’s a polymerized fat — a layer of oil that has been bonded to the iron through heat, changing its molecular structure and becoming part of the pan itself.
When oil is heated above its smoke point in the presence of oxygen, the fat molecules break down and rebond into a polymer network. This polymer is hard, dark, slick, and chemically bonded to the iron surface. It’s not greasy. It’s not removable by hand. It fills the microscopic pores of the iron and creates the nonstick surface cast iron is known for.
Each cook, each seasoning session, adds another thin layer. A well-used cast iron pan from the 1950s with 70 years of accumulated seasoning is as nonstick as anything Teflon ever produced — and it didn’t get there because someone read a guide. It got there because someone cooked bacon in it every Saturday morning for seven decades.
That’s all seasoning is. Accumulated layers of properly polymerized fat. The process you do intentionally with an oven is just accelerating what cooking in it does naturally.
Starting Point: New Cast Iron vs. Vintage
New cast iron (Lodge, Field Company, Butter Pat, etc.) comes pre-seasoned from the factory. The Lodge seasoning is vegetable oil; it’s thin and functional but not the deep, smooth seasoning of a well-used pan. A new Lodge is ready to cook in immediately. It will improve with use and occasional re-seasoning for the first year.
Vintage cast iron — pans from the early to mid 20th century, Griswold, Wagner, unmarked farm finds — often has either decades of accumulated seasoning or decades of neglect, rust, and baked-on residue. Most vintage cast iron worth buying falls somewhere between “needs a good clean and one seasoning pass” and “needs full restoration.” The restoration process is covered at the end of this article.
For most people reading this with a Lodge 12″ on their stove: the factory seasoning is fine. Cook in it, clean it right, do one oven seasoning pass every few months, and it will build naturally.
How to Season in the Oven
When to do this: when you get a new pan and want to build on the factory seasoning, when the seasoning looks patchy or thin, after a full restoration, or roughly every two to three months for a pan in regular use.
What you need: The pan. Your chosen oil (see below). Paper towels. An oven.
Oil selection: This is where most guides disagree, and the disagreement is mostly noise. The key variable is the oil’s polymerization quality, which is related to its iodine value — higher iodine value means better polymerization. Flaxseed oil was the popular recommendation for years because of its very high iodine value, but it produces a brittle seasoning that chips easily under thermal stress. Most experienced cast iron users have moved away from it.
The practical recommendations:
– Crisco vegetable shortening — the old-school standard, still one of the most reliable
– Grapeseed oil — high smoke point, polymerizes well, widely available
– Canola oil — reliable, accessible, produces good seasoning with multiple coats
– Lard or bacon fat — traditional, works excellently, slightly harder to source in consistent form
Avoid olive oil (too low a smoke point), butter (burns before it polymerizes), and coconut oil (polymerizes poorly).
The process:

Preheat your oven to 450°F to 500°F. Higher is better for polymerization.

Wash the pan with soap and hot water. Yes, soap. The “never use soap” rule applies to cleaning a well-seasoned pan — not to a seasoning session where you’re starting fresh. Soap removes residual oils and debris. Rinse thoroughly.

Dry the pan completely. Put it on the stovetop over medium heat for 2 to 3 minutes to drive off all moisture. Cast iron that goes into the oven wet develops surface rust before the oven gets hot.

Apply a very thin coat of oil to every surface — inside, outside, handle, bottom. Use a paper towel to spread it, then use a clean dry paper towel to wipe off almost all of it. The layer should look almost invisible. If you can see a sheen of oil, you’ve applied too much.
This is the step most people get wrong. Too much oil creates a thick, sticky, gummy seasoning rather than a hard polymerized one. Thin layers are the whole game.

Place the pan upside down on the oven’s center rack. Put a sheet of foil on the rack below to catch any drips.

Bake for one hour. Turn the oven off and let the pan cool in the oven completely before removing.
That’s one seasoning pass. For a new pan or a freshly stripped pan, do three to four passes in succession. For maintenance, one pass every few months is sufficient.
Cooking in Cast Iron: What Changes
Cast iron behaves differently from stainless and nonstick in two important ways: it preheats slowly and retains heat intensely.
Preheat time matters. Cast iron is a poor conductor of heat — it moves heat slowly from the heat source through the pan. But once it’s hot, it holds that heat better than almost any other cookware material. A cold cast iron dropped into a hot oven or placed on a hot burner without preheating will have hot spots directly over the heat source and cold spots everywhere else.
The solution: preheat on medium heat for 3 to 5 minutes before adding food. The pan should be uniformly hot before anything goes in. Test it with a drop of water — it should evaporate immediately, not pool or dance across the surface.
High heat is cast iron’s friend. The nonstick quality of seasoned cast iron performs best when hot. A properly preheated, well-seasoned cast iron skillet releases most foods as well as any synthetic nonstick — including eggs. A cold or insufficiently preheated cast iron does the opposite: it sticks aggressively because the food bonds to the iron before the heat can release it.
Oil the food, not just the pan. For most cooks, adding a thin film of oil to the preheated pan and then adding lightly-oiled food produces the best results. Both surfaces carry a small amount of lubrication, and the hot pan prevents the bonding that causes sticking.
What cast iron does exceptionally well:
– Searing — the heat retention means adding cold protein to a hot pan doesn’t drop the temperature significantly, so the sear stays aggressive
– Oven-to-stovetop cooking — a chicken breast started on the stovetop and finished in the oven, a cornbread started in the oven and served at the table, a frittata done entirely on the stovetop and then under the broiler
– High-heat work that would warp stainless — prolonged high heat that would damage lesser pans is cast iron’s native environment
– Cooking outdoors — over fire, on a grill grate, on a camp stove, directly in embers. Cast iron was built for all of it.
What it does less well:
– Acidic foods cooked for a long time — tomato sauce, braised wine dishes, anything acidic left in the pan will strip seasoning and add a metallic flavor. Short contact is usually fine. Leaving a tomato sauce in a cast iron overnight is not.
– Quick, delicate tasks that require responsive temperature changes — for that, a stainless or a well-made carbon steel pan is more forgiving
– Households where wrist strength is a consideration — a 12″ Lodge weighs 8 pounds. It’s a serious pan.
Cleaning: The Part Everyone Overthinks
What to do after every cook:
While the pan is still warm (not scalding), rinse it with hot water. Use a stiff brush or the Grumpy Dad-recommended chain mail scrubber to remove food particles. The Lodge brush works. A standard dish brush works. What you’re doing is mechanical removal of debris — not chemical stripping.
For stuck food: add a small amount of water to the warm pan and bring it to a simmer on the stovetop for 1 to 2 minutes. The steam loosens most stuck material. Or add coarse kosher salt and a paper towel and scrub — the salt acts as an abrasive without stripping seasoning.
Dry the pan completely. Heat on the stovetop for 1 minute to drive off moisture. Apply a very thin film of oil with a paper towel — just enough to give the surface a matte sheen, not enough to feel greasy. That’s the full process. Under five minutes.
Can you use soap? Yes, occasionally. Modern dish soaps are nowhere near as caustic as the lye soaps that gave cast iron care its “never use soap” rule. A small amount of mild dish soap on a well-seasoned pan occasionally will not strip the seasoning. Using it aggressively every day will gradually thin it. The practical answer: if you need soap for a particularly oily or strongly-flavored cook, use it sparingly, dry and lightly oil the pan afterward, and don’t worry about it.
Never: Put it in the dishwasher. Soak it in standing water. Leave it wet in a sink. Store it wet. All of these accelerate rust.
Fixing a Rusty or Sticky Cast Iron
Surface rust (orange spots on the cooking surface):
This happens. It doesn’t ruin the pan. Scrub the rust off with steel wool or a chain mail scrubber and hot water. The rust should come off without much resistance. Dry the pan completely, heat on the stovetop, and do one seasoning pass in the oven. Done.
Widespread rust or full stripping:
If the pan was stored wet for extended time, you may have rust across the full surface and residual old seasoning that’s flaking.
Option A (mild): Scrub with steel wool until the surface is uniform and you’ve removed all flaking material. Wash, dry, season with 3 to 4 oven passes.
Option B (full restoration): Electrolysis, lye bath, or self-cleaning oven method — these strip the pan entirely to bare iron. After that, start seasoning from scratch with 4 to 5 passes. This is for vintage pans with heavy buildup or deep rust. It’s more involved but produces a clean slate.
Sticky, gummy seasoning:
Caused by too much oil applied in a single seasoning pass. The oil didn’t fully polymerize — it partially polymerized and stayed tacky. Fix: put the pan in a 500°F oven for an hour, which will force the partial polymer to finish polymerizing. If the tackiness persists, strip and re-season with thinner coats.
The Bottom Line
A cast iron skillet maintained correctly is the most useful pan in most kitchens. It sears better than nonstick. It transfers from stovetop to oven without a second thought. It goes camping. It survives things that would ruin other cookware. And it gets better every year it’s used.
The rules are not hard. They’re just specific. Preheat properly. Dry it after washing. Thin oil coats. Don’t leave it wet.
